Education means that the reciever of the new information is now aware of it by the learning process. I wouldn't call Gravity Falls "Educational" because not for watching the show someone will know everything about the occult (actually not for watching the show someone would even be aware of the hidden meanings behind its symbology).
My point is that you need to know other stuff in order to evaluate correctly all the cryptic information that is present in the show, so no, Gravity Falls is far from being educational.
Note** Educational as in traditional educational, meaning a tool to traspass knowledge. Maybe Gravity falls could be used in alternative methods of "teaching", such as Monarch programing (that would be so horrible though), but I can't realy tell because I don't know for sure.
